How long can I keep the recordings?
As a general rule, one month from when they were captured. Article 22 of Organic Law 3/2018 sets it: after that period the images are deleted, apart from those that have to be kept to evidence acts against the integrity of people, property or installations, which are separated from the rest and made available to the competent authority.
There are activities with rules of their own that can require different periods, and there their sector regulation governs. That is why the retention period is not a technical decision adjusted on the recorder: it is decided beforehand, documented, and then the system is configured to meet it by itself, deleting by age without anybody having to remember.
The other side is just as important and gets forgotten: keeping too little is also a problem. If a stock discrepancy is spotted at a stocktake every two months, a system that deletes after fifteen days is no use at all. The period has to sit between what the law allows and the time you really take to find things out, and each particular case is worth reviewing.

A written answer is enough to decide whether it interests you. To know whether it works at your site you have to see it on a real scene, with the image as it is and, on top of it, what the system understands from it. That is on the IRIS Neural website, which is the group's product.
