What is the difference between your own server, a factory-built recorder and the cloud?
Three things change: who maintains the equipment, what happens if the site disappears and how far you can grow. A factory recorder is the simplest and the most closed: it comes built and tested, and in exchange the manufacturer decides which cameras it takes, how many and until when. A server with video management software costs more and lets you decide everything, including the make of the cameras and how it grows; in exchange it has to be sized, maintained and updated.
The cloud takes the equipment work away and adds a dependency: an upload that can carry all the video, every hour, and a fee that never ends. In exchange, what is off site survives the fire and the theft of the recorder.
All three are valid. What is not valid is choosing without knowing what you lose with each one, and on medium and large installations what usually works is to split it: record on site and send off site only what has to survive the site.
