Does the firmware on the cameras and the switches have to be updated?

Yes, but with a plan and a way back. A good part of the updates close holes that people get in through, so not updating has a real cost. And the other half of the problems on a stable system arrive the day somebody updated at midday without telling anyone.

How to do it: save the configuration first, try it on one device first, go in batches, do it outside the hours when the system matters, and keep the previous version to hand in case you have to go back.

And there is one case where you think twice: when the recorder and the camera are validated together on specific versions. There, updating one means checking the other, and that check is part of the job, not a detail.
