What state is each door left in when the power goes off?

However it has been decided for that particular door, and that decision belongs to safety and not to the installer. With no power a controlled door can only stay one of two ways: open or closed, and both are right and dangerous depending on which door it is.

The usual criteria: escape routes and any door with people behind it, open; store, plant room, strongroom, archive, closed — and always with a mechanical way of getting out from the inside. That goes into a table in the project, door by door, and it is signed by the person responsible for the site, not the technician who fits it.

Then there is the autonomy, which is the forgotten half of the same question. The controller with its battery lasts a fair while, but magnetic locks draw current all the time and eat through the backup power much sooner. You have to work out how long each door has to hold out, whether the backup power covers only the electronics or the locks as well, and what happens when it runs out. An access control system that does not survive a two-hour cut protects you on the good days.
