Can I limit which cameras each person can see?
Yes, and it is one of the main reasons for having a VMS. Permissions are given by profile and not by person: you define what a role can do —which cameras it sees live, which it can play back, whether it can move a PTZ camera, whether it can export, whether it can change configuration— and people are put into the role that fits them.
Serious systems let you tune it more finely than it looks: giving live but not recorded, which is the usual thing for a caretaker; limiting how many days back somebody can see; hiding sensitive cameras from everyone except two people; or requiring a second user to authorise access to certain images, which is a useful arrangement where there is worker representation.
And it is worth tying it to the corporate directory if there is one, instead of keeping a user list of the video system's own. That way, when somebody leaves the company, they stop having access to the video the same day and not the day somebody remembers. Shared accounts of the «operator» sort with a password everybody knows are the practice to dismantle first, because they cancel out any record afterwards.
