What is an interlock and where does it make sense?
Two doors interlocked with each other, so that the second does not open until the first is closed, with a space in between where the person is held for a moment. It is the only way of physically stopping two people going through at once.
It makes sense where preventing is different from detecting: data centres, counting rooms, laboratories, cash handling areas, access to restricted airport areas. Inside you can add whatever is needed — a weighing floor that detects two bodies, a second credential that has to be presented inside the booth, or remote authorisation from a guard who looks at the camera before opening the second leaf.
The trade-offs are serious: it is slow and no use for a shift change, it takes building work, and it forces you to solve what happens if somebody is left inside during a power cut or a fire alarm. It is one of the few points in access control where evacuation and security clash head-on, so it is drawn with the fire engineer present and tested with people inside.
